Camaiore Pepper Cake: History, Recipe and where to find it

When the pepper cake is mentioned, in the streets of Camaiore, the locals begin to remember getting lost in their memories.

In these territories, for the patronal feasts, there was a procession of women with pans poised on their heads who went to the country ovens to bake homemade cakes.

Through the streets of the villages spread that smell of good food that characterized the vigil of solemn feasts.
And among all the families there was a competition for those who cooked more, but also for those who made them better.

 

A slice of cake and a glass of wine  was the typical welcome to relatives and friends who came from outside to the village to celebrate the Santo Patrono.

What better way then to welcome travelers to find a good local wine and a small pepper cake in your room?

Moving a few kilometers directly into the city of Camaiore, this recipe is found in many ovens and delis.
For the locals the best cakes competes in two ovensPasticceria sul Prado and Pizzeria Pasubio.

We leave you a recipe found in an old Camaiore book:

  In a saucepan put the rice in the milk. Cook over low heat. When it is well cooked and the milk is almost completely withdrawn, remove from the heat and add the eggs, ricotta, pecorino cheese, previously minced ground beef. Mix well by adding a sprinkling (a lot) of freshly ground black pepper and a drizzle of oil. Separately, a mixture is made with wheat flour, eggs, lots of oil and salt. Make a ball and let it rest for an hour in a fairly warm place. Then spread the dough with a rolling pin and place in a buttered pan. Pour over the mixture. Fold the pasta that comes out and cut it into rolled triangles, commonly called lace. Sprinkle over plenty of cheese and cook in a hot oven.
